Deep fry thermometers measure temperatures from 100 °F (37.8 °C) to 400 °F (204.4 °C). The temperature of hot oil for deep frying food is usually maintained at 350 °F (176.6 °C) to 375 °F (190.5 °C). These thermometers are also used to measure the extra-high temperatures required of candy and jelly making.
Most deep frying starts with oil between 325 and 375 degrees, but the temperature drops when food is added. Once the oil recovers some heat, it should remain somewhere between 250 and 325 degrees (depending on your recipe) for the duration of cooking.
