Description
Curry powder is a spice mix originating from British India, not to be confused with the native spice mix of garam masala. Turmeric, cumin, chilies (red or green) and ginger are essential ingredients in many curries, but coriander, fenugreek, mustard, pepper, cinnamon, clove, cardamom and nutmeg can be just as vital, along with fresh aromatics such as garlic, onion, cilantro, lemongrass, lime and lemon to name but a few.
Curry powder is a necessary addition to any home, restaurant, cafeteria, or other food service establishment that wants to make delicious South Asian cuisine. The golden, savory spice is comprised of coriander, turmeric, cloves, pepper, garlic, cumin, salt, allspice, and mustard. Having all these flavors combined makes it easier to consistently get the right ratio of spices for your foods.
Description:
Both garam masala and curry powder are used to add flavor and color to dishes. One of the biggest differences between the two is that garam masala doesn’t contain tumeric, which is one of the main ingredients in curry powder, imbuing dishes with a yellow hue.
Usage:
The most common uses for curry powder are to make curry! Other curry powder uses include adding depth and curry flavor to vinaigrettes and condiments, rice, and vegetable dishes, and even desserts. The sauce-like component characterized with “curry” has been derived from the Tamil word kaṟi . The meaning ‘sauce’ or ‘relish for rice’ and finds synonyms with other regional references to local dishes. This has evolved over thousands of years in the Indian subcontinent, such as “jhol”, “shorba” and “kalia”.
Several standards on curry powder have been defined. Most outline analytical requirements such as moisture, ash content, and oil content as well as permissible additives. Some also define a number of expected ingredients.
In the US, curry powder is expected to contain at least turmeric, coriander, fenugreek, cinnamon, cumin, black pepper, ginger, and cardamom.
