Description

This is the best spicy poultry coating mix for deep frying poultry you have ever tasted. The recipe for this coating is very old and originated in Arkansas. Remember the first time you smelled fried chicken cooking? Remember your first taste? We have made this light and fluffy coating with just enough punch to remind you of your first time. This also makes good gravy mix and or coatings for onion rings. We also like using this mix to coat a turkey for deep frying. You get that same fantastic flavor and aromas you get frying chicken.

Let’s assume you’re going to fry chicken using this mixture. The first step to breading chicken is crucial; make sure the chicken is completely dry before starting the dredging process. Using a paper towel, pat the meat dry on all sides. Excess moisture will cause the flour to get soggy and thus will not adhere properly to the chicken. Thoroughly coat your poultry using whatever coating you currently use (eggs most likely) and roll the meat in the mixture. You can then deep fry, air fry, or bake your chicken. The good thing is you don’t need to be bashful about taking a nap afterwards.

Usage:

One problem people have is the coating mix not sticking to the chicken. Coating falls off because of two reasons. Not allowing the batter to sit on the steak and adhere (transforming into an almost dough) before frying, and the frying oil not being hot enough. The first solution is to be sure to thoroughly dry the chicken with paper towels before you dredge it. If the chicken is too wet, you won’t get a nice, even coating of flour. Of course, that doesn’t matter when using eggs as the binder.

The solution to the next problem is heating the oil to the appropriate temperature. You’ll be looking for an oil temperature of 325°F, and you’ll want to maintain that temperature as much as possible. Lastly, do not overcrowd the pan. Fry a few pieces of chicken at a time while making sure to bring the oil back up to temperature at the end of each batch before starting a new one.
