Instant Read bimetallic-coil thermometers measure temperature in 15 to 20 seconds. They are not designed to remain in food while cooking; use near the end of the estimated cooking time to check for final temperatures. A meat thermometer is like an instant-read, but it sports a larger dial (on the analog types) to make them easier to read.
Usage:
An instant-read thermometer is ideal for checking the temperatures of liquids such as stocks and soups. This helps making sure they are cooling quickly enough to minimize the growth of bacteria; or for checking the temperatures of hot foods. This can be extremely useful for food being held for service on a buffet. Unlike probe thermometers (more on those below), instant-read thermometers cannot be left sticking out of your rack of lamb. While it cooks; you’ll need to pull your protein out of the oven or lift the lid of your grill every time you want to get a read. But alas, lifting the lid will release a lot of heat and ultimately prolong cook time.
Can You Use a Meat Thermometer for Oil? The short answer is yes. The term meat thermometer is quite a misnomer, as you can use this type of thermometer to get an accurate reading from almost anything. Thermometers must be calibrated daily to ensure accurate temperature readings. They must also be calibrated after an extreme temperature change. An example is after measuring hot food first and then frozen food, or after a thermometer is dropped.
Warning:
Glass mercury thermometers are no longer recommended and can be dangerous. There are serious health risks if a glass mercury thermometer breaks. Mercury is toxic if inhaled or if the liquid touches the skin.
