Description
Paprika, or pimentón, is one of the essential ingredients in Spanish cooking. It is used in everything from chorizo sausage and lomo to chilindron sauces and sprinkled on top of octopus and even fried eggs. Spanish Paprika is made by slowly smoking the dried pepper pods and then grinding them into a fine powder. The result delivers an earthy, smoky, and mildly warm flavor that is a unique variation on a kitchen classic.
There’s a big difference in flavor. Spanish Paprika, called pimentón ahumado, starts with Nora peppers slow smoked over an oak fire, then ground to a powder. Most other paprikas are sun- or kiln-dried. The Spanish paprika is spicier and more flavorful. Despite its importance, the origins of paprika are simplicity itself- a ground spice produced from sun-dried peppers that are then consumed whole, crushed into flakes, or ground into the wonderful pimentón.
