The best woods for smoking come from deciduous trees—especially from nut trees, such as hickory, pecan, and oak, and fruit trees, like apple and cherry. You can soak your wood chips in virtually any liquid to impart a unique flavor apart from water.
Water simply delays the burning of the wood chips which is the smoke flavor that you are looking for without adding any additional flavor to your entrée. Depending on who you ask, soaking isn’t necessary and probably does more harm than good. It certainly makes getting consistent and delicious results more challenging, and that’s not something anyone is trying to achieve when smoking. If you are going to soak wood chips, try using juice, beer, or whiskey to add flavor.
Whether you soak wood or not, this bucket is perfect for managing wood chips. It’s made of heavy grade metal and has a handle for easier carrying. You will get limited or no smoke production if the wood is without measurable moisture. You need to purchase wood chips that have some measurable moisture to work effectively. Chips labeled as kiln dried are likely too dry for producing smoke vapor. When smoking wood, the rule of thumb is to place smoking chunks in a medium-sized bowl or pan. Fill a bowl or pan with water (or fruit juice). Allow smoking chunks to soak for 24 to 48 hours. After soaking, the smoking chunks are added to the smoker or grill.
The Ugly:
Raw or cooked meat and fish, including bones, can be recycled in your food and garden bin. Enter the bone chip bucket. Food waste can’t be recycled at any Recycling Centers. This is because the Recycling Centers are not licensed to accept food waste. Most animal bones, meat and seafood can be composted, albeit at a much slower rate than other items.
