Sauce & Bean Pot With Mop
Beans on the grill are as appropriate as BBQ slow smoked on the grill. For those who sauce their food, sauce needs to be available and ready to go. Regular baked beans are delicious. Smoked baked beans are what side dish fantasies are made of. I’ve been working on a good baked beans recipe for a long time, and I’ve tried them all. I am a lover of all beans in all varieties. My ideal combination for the perfect smoked baked beans is the balance of sweet and heat with the right amount of smoke. This Sauce & Bean Pot With Mop is the perfect tool for preparing sauces or beans on the grill.
It takes approximately 3 hours to smoke baked beans with your smoker running steady at 250 degrees F. This time may vary slightly depending on how long it takes for your bacon to cook through, but 3 hours is a decent gauge for this recipe. My preference is thick-cut bacon because each person gets their own nice thick piece of bacon with their beans. The bacon doesn’t get super crisp, just rendered and incredibly tender. If you want the bacon to be even more tender and fall apart, go with a thinner sliced bacon, and use a couple more slices of it. If you want the bacon to be crisp, broil the skillet of beans for 2-3 minutes after pulling it off the smoker. Watch closely so the sugar in the beans doesn’t burn.

And for those like me who love beans but are challenged after the fact. Baking soda helps break down some of the beans’ natural gas-making sugars. I tested this while fixing one of my favorite slow cooker recipes: red beans and sausage. To degas with baking soda, add a teaspoon of baking soda to 4 quarts of water. Stir in the dried beans and bring to a boil. Additionally, ajwain or epazote – both spices will decrease gas production. Just add about a tablespoon to a large pot of beans during the cooking process. You can also add ginger or cumin as these spices help with digestion. I sincerely hope it helps.
