While granulated garlic is coarsely ground to a sand consistency, garlic powder is finely ground to a flour consistency. Due to the size difference, garlic powder is more potent in flavor than granulated garlic. This because more of the surface area of the garlic is exposed to oxygen, releasing more of the sulfur compound.
Usage:
This garlic has more air by volume due to its larger size, while garlic powder is denser. Double the number of garlic grains – for instance, two teaspoons granulated garlic for every one teaspoon garlic powder. If you prefer fresh garlic but only have spices, one fresh clove of garlic can be considered equivalent to ¼ teaspoon of garlic powder, or ½ teaspoon of granulated garlic. If you’re trying to mimic fresh garlic, using hydrated granulated garlic will be the best replacement.
