Usage:
When making beef fajitas, rub the steak with fajita seasoning and salt in advance. By adding the salt 30 minutes before cooking, it has a chance to improve the flavor and texture of the meat. As a result, the steak tastes terrific, and it’s extra tender. Pound the steak to an even, thin thickness. Even if your steak looks even already, you’ll still want to give it a good pounding to tenderize it.
When making chicken fajitas, cook the chicken first to about 160ºF (71ºC) and brown the surface. Usually about about 3 minutes per side is long enough. Transfer it to a cutting board and slice it against the grain into thin strips for the most tender bites. Sauté the sliced onions and bell peppers until crisp-tender.
