Lime zest is the outer skin of unwaxed citrus fruit, like lime or lemon, often used as a flavoring or aromatic garnish. The skin of a lime has two layers encircling the fruit: the outer part of the peel or rind called the zest (flavedo) and the pith (albedo), the underlying white part.
Lime zest is a great flavor for salsas and ceviche’s, rice dishes, and baked goods. Add it to marinades for chicken and fish, or steep with green tea for a subtle tropical flavor. Rehydrate this dehydrated lime before adding dry ingredients.
Zest is often used to add flavor to different pastries and sweets, such as pies (e.g., lemon meringue pie), cakes, cookies, biscuits, puddings, confectionery, candy, and chocolate. Zest also is added to certain dishes (including ossobuco alla milanese), marmalades, sauces, sorbets, and salads.
